Ingredients:

  • Corn
  • Shredded Carrots
  • Green Bell Pepper
  • Red Bell Pepper
  • Green Onion
  • Cilantro
  • Olive Oil
  • Lime
  • Cumin
  • Salt

Instructions:

  1. Prepare the Veggies: Gather your ingredients. Add 1/4 cup of corn to a bowl. Then, toss in 2 tablespoons of shredded carrots.
  2. Next, dice the green and red bell peppers into even pieces and add them to the bowl.
  3. Now, it’s time to bring in some freshness. Cut the green onion into small pieces and chop the cilantro finely. Add them to the bowl with the other veggies.
  4. Drizzle 1/4 teaspoon of olive oil over the mixture. Squeeze a wedge of lime to add a zesty kick.
  5. Sprinkle in 1/8 teaspoon of cumin for a burst of flavor. Finally, add a pinch of salt to taste.
  6. Gently toss all the ingredients together until well combined. Your Confetti Corn is now ready to serve!
